Hafsa's Tips
- Chicken thighs are more forgiving than breast — they stay juicy even if cooked a minute too long, making them ideal for salads.
- Cut the pineapple into small, fine pieces rather than chunks. This way every forkful gets a little sweetness without a huge bite of fruit throwing off the balance.
- No fresh pineapple? Canned pineapple (drained well) works in a pinch — just pat it dry so it doesn't water down your salad.
- Let the chicken cool for a few minutes before adding to the greens. Adding it piping hot will wilt the salad kit leaves.
- The rice is optional but highly recommended — it turns this from a side salad into a full, filling meal.
- Any salad kit works here: Caesar, Asian-style, Southwest, or a simple garden blend. The Asian-style kits pair especially well with the pineapple.
