Here’s something I love about this recipe that I don’t think gets talked about enough: it is genuinely economical. I get my shrimp from Whole Foods — they have an excellent selection of peeled and deveined jumbo shrimp that’s always fresh and cooks beautifully. A pound runs about $14–15. A pound gives you up to 15 jumbo shrimp. Add a $2 pack of fettuccine and the rest is pantry spices. For a family dinner that feels this indulgent, that’s a serious win.

A Note on Shrimp Technique:
The single biggest mistake people make with shrimp is overcooking them. You want to pull them at 50–75% done; light pink, just starting to curl, not cooked all the way through. They finish cooking when you add them back into the sauce. I also highly recommend watching the TikTok video linked below; seeing the technique really helps before you make it the first time.


Build the sauce base by adding the knob of butter. Once melted add the chopped onion and garlic. Add the Garlic Chili Crunch flakes, mango chili sauce, rice vinegar, and sweet chili sauce
Bring a large pot of water to a boil. Season generously with salt and a splash of oil. Drain the fettuccine (al dente — don’t overcook it). Reserve 2 spoonfuls of the starchy pasta water for the sauce.


Add the shrimp back into the pan and toss to coat in the sauce. Work quickly here — shrimp finish cooking fast.
Toss everything together until the pasta is evenly coated in the sauce. Top generously with fresh cilantro, toss once more, and serve immediately.

Season the Shrimp

Start the Pasta Water
Bring a large pot of water to a boil. Season generously with salt and a splash of oil. Set aside and let it come to a full boil — you'll add the fettuccine once the shrimp are well underway. Before draining the pasta, reserve 2 spoonfuls of the starchy pasta water for the sauce
Sear the Shrimp - Pull Early
Heat neutral oil in a large pan over high heat. Add the shrimp in a single layer. Cook until just starting to turn pink and curl - about 2–3 minutes. Flip once. You want them at 50–75% done, not fully cooked. When they're light pink but not curled all the way through, transfer them to a plate. They will finish cooking in the sauce.
Build the Sauce Base
In the same pan, reduce heat to medium-low. Add the knob of butter and let it melt. Add the chopped onion and garlic. Cook, stirring occasionally, until the onions have softened and the garlic is fragrant — about 3–4 minutes.
Add the Sauces
Add the Garlic Chili Crunch flakes, mango chili sauce, rice vinegar, and sweet chili sauce. Keep the heat on low — these sauces will burn quickly on high. Stir everything together and let it cook for about 1 minute. Add the 2 spoonfuls of pasta water and the brown sugar. Stir to combine into a glossy, fragrant sauce.
Add Shrimp Back In
Add the shrimp back into the pan and toss to coat in the sauce. Work quickly here — shrimp finish cooking fast. Stir until every shrimp is fully coated and cooked through, about 1–2 minutes more.
Toss with Fettuccine and Serve
Drain the fettuccine (al dente — don't overcook it) and add it directly to the pan. Toss everything together until the pasta is evenly coated in the sauce. Top generously with fresh cilantro, toss once more, and serve immediately.
