Prep the Chicken
Cut your chicken thighs into small, even bite-sized cubes — about 1 to 1½ inches. Smaller pieces cook faster and are easier to eat in a salad.Season & Cook
Heat 1 tablespoon of canola oil in a pan over medium heat. Add the chicken and season with salt, Kashmiri chili powder, onion powder, garlic powder, Italian seasoning, chicken powder, and black pepper. Stir to coat the pieces evenly.
Steam Through
Add a small splash of water to the pan, place the lid on top, and let the chicken cook through on medium heat until no pink remains — about 10–12 minutes. Stir occasionally. Taste and adjust
seasoning. A squeeze of lemon or a dash of vinegar at the end adds a lovely brightness.Prep the Pineapple
While the chicken cooks, cut your fresh pineapple into small, fine pieces. Cutting it small ensures you get a little sweetness in every bite without the pineapple overpowering the salad.
Assemble the Salad Kit
Empty your salad kit into a large bowl. Set the dressing packet aside for now — you'll add it with everything else so the greens don't wilt before you're ready.
Add the Rice
Add 3–4 tablespoons of your cooked rice to the salad bowl. This adds a satisfying carb element to balance out the protein and fiber in the salad. Leftover basmati or jasmine rice both work beautifully here.
